These indulgent cookies are a little naughty, but incredibly nice! The fresh burst of peppermint comes from chunks of the famous Romney's Kendal Mint Cake. This is a bar of minty glucose which is used to give energy to hill walkers in the UK's beautiful Lake District. In fact, it serves bigger hills than that, having accompanied Sir Edmund Hillary to the top of Everest in 1953!
